  • 1/4 c. olive oil
  • Kosher salt
  • Freshly ground black pepper
  • Pinch red pepper flakes
  • 1 c. shredded Parmesan
  • 2 tbsp. Freezies Freeze-Dried parsley
  • 1/2 tsp. garlic powder

  • 1 c. sour cream

  • 1 tbsp. Freezies freeze-dried parsley
  • Kosher salt
  • Freshly ground black pepper

  • Step 1: Preheat oven to 400° and line a baking sheet with parchment paper.
  • Step 2: To rehydrate summer squash, place it in a bowl with hot water using a 1:2 ratio and cover for 5-10 minutes. If you would like to speed up the process, microwave it for 1-2minutes instead.
  • Step 3: In a large bowl toss together squash and olive oil. Season generously with salt, pepper, garlic powder, and red pepper flakes.
  • Step 4: In a shallow bowl mix together parmesan, and parsley. One at a time dip squash into seasoning mixture, pressing to coat then place on prepared baking sheet.
  • Step 5Bake until golden and crispy, about 20 minutes.
  • Step 6: Make the dipping sauce: In a small bowl, stir together sour cream, lemon juice, and parsley. Season with salt and pepper.

Serve chips with dipping sauce & enjoy!
